Double Chocolate Muffins

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar (packed)
  • 2 large eggs
  • 1/2 cup vegetable oil (or melted butter)
  • 1 tsp vanilla extract
  • 1/2 cup milk (or any non-dairy milk)
  • 1 cup chocolate chips (milk or dark, or a mix of both)

Instructions:

  1. Preheat the Oven: Set your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.

  2. Mix the Dry Ingredients: In a large bowl, whisk together the flour, cocoa powder, baking soda, salt, granulated sugar, and brown sugar.

  3. Combine the Wet Ingredients: In another bowl, beat the eggs, oil, vanilla extract, and milk together until smooth.

  4. Combine Wet and Dry: Slowly add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to overmix.

  5. Add the Chocolate Chips: Gently fold in the chocolate chips, saving a few to sprinkle on top for an extra chocolatey finish.

  6. Fill and Bake: Divide the batter evenly among the muffin cups, filling each about 2/3 full. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean (with just a few crumbs).

  7. Cool and Enjoy: Let the muffins cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
