Instructions:

Preheat your oven to 350°F (175°C). Lightly grease a baking dish (9×9 or similar size) with cooking spray or oil. -
Mix the Base:
In a large bowl, combine the cottage cheese, eggs, salt, pepper, and garlic powder. Stir well until the eggs are fully incorporated into the cottage cheese. -
Add the Veggies:
Add the chopped spinach, diced tomatoes, and diced onion to the egg mixture. Stir everything together until evenly mixed. -
Pour into Pan:
Pour the egg and veggie mixture into the prepared pan, spreading it out evenly. -
Top with Cheese:
Sprinkle the grated or cubed skim marble cheese evenly on top of the egg mixture. If you’re using Everything Bagel seasoning, sprinkle it on top for an extra pop of flavor. -
Bake:
Bake in the preheated oven for about 25-30 minutes, or until the eggs are fully set and cooked through (a knife inserted into the center should come out clean). -
Serve:
Allow the egg bake to cool for a few minutes before slicing into 4 servings.
