A flavorful, healthy spin on the traditional gyro! Here’s the recipe for this Mediterranean favorite.
Ingredients:
- Chicken Marinade:
- 2 lb chicken thigh fillets, boneless, skinless
- 3 garlic cloves, minced
- 1 tbsp white wine vinegar
- 3 tbsp lemon juice
- 1 tbsp olive oil
- 3 tbsp Greek yogurt
- 1 1/2 tbsp dried oregano
- Salt and black pepper
- Tzatziki Sauce:
- 2 cucumbers, grated and squeezed to remove juice
- 1 1/4 cups Greek yogurt
- 1 tbsp lemon juice
- 1 tbsp olive oil
- 1 garlic clove, minced
- Salt and pepper to taste
- Salad:
- Tomatoes, deseeded and diced
- 3 cucumbers, diced
- 1/2 red onion, finely chopped
- Fresh parsley (optional)
- Salt and pepper
- To Serve:
- 4-6 pita or flatbreads
Instructions:
- Mix all the chicken marinade ingredients and marinate the chicken for at least 2 hours.
- For the tzatziki, mix all the sauce ingredients together and refrigerate.
- Grill or pan-fry the marinated chicken until fully cooked.
- Toss salad ingredients together.
- Assemble gyros by placing the chicken on pita, topping with tzatziki sauce and fresh salad.
