Greek Chicken Gyros

A flavorful, healthy spin on the traditional gyro! Here’s the recipe for this Mediterranean favorite.
Ingredients:

  • Chicken Marinade:
    • 2 lb chicken thigh fillets, boneless, skinless
    • 3 garlic cloves, minced
    • 1 tbsp white wine vinegar
    • 3 tbsp lemon juice
    • 1 tbsp olive oil
    • 3 tbsp Greek yogurt
    • 1 1/2 tbsp dried oregano
    • Salt and black pepper
  • Tzatziki Sauce:
    • 2 cucumbers, grated and squeezed to remove juice
    • 1 1/4 cups Greek yogurt
    • 1 tbsp lemon juice
    • 1 tbsp olive oil
    • 1 garlic clove, minced
    • Salt and pepper to taste
  • Salad:
    • Tomatoes, deseeded and diced
    • 3 cucumbers, diced
    • 1/2 red onion, finely chopped
    • Fresh parsley (optional)
    • Salt and pepper
  • To Serve:
    • 4-6 pita or flatbreads

Instructions:

  1. Mix all the chicken marinade ingredients and marinate the chicken for at least 2 hours.
  2. For the tzatziki, mix all the sauce ingredients together and refrigerate.
  3. Grill or pan-fry the marinated chicken until fully cooked.
  4. Toss salad ingredients together.
  5. Assemble gyros by placing the chicken on pita, topping with tzatziki sauce and fresh salad.
