- 2.5 Tbsp collagen
- Butter, tallow, or ghee for greasing the pan

Mix the Gelatin: Slowly add the gelatin to the egg whites while mixing on a slow speed (using a hand mixer or stand mixer works best here).

Collagen Time: Mix the yolks in another bowl and add the collagen as you continue to mix on low.

Whip and Fold: Whip the egg whites until they form stiff peaks. Then, gently fold the whipped egg whites into the yolk mixture with a spatula. Take your time with this step to keep the fluffiness.

Cook: Heat your pan on medium-low and grease it with butter, tallow, or ghee. Pour the batter into the pan and cook until golden brown on both sides.
